Baked Chilaquilles

This was definitely a hit with my hubby. This is what I did.

In a glass pyrex casserole dish (8x8 size) layer:

1 small can of tomato sauce (I used salsa style)
1/4 or so of chopped onion
2 handfuls of tortilla chips (multigrain are really good in this)


Then beat 6 eggs and mix in some powdered cumin- 1/2 tbsp.
Pour the egg gently over the tomatoes and chips in the pan.

Cook at 350 degree for 23 minutes. Meanwhile, chop some white cheese- 1/4- 1/2 cup (monterey jack, queso fresco, etc). Top the cooked eggs with the chopped or shredded cheese
and put back in the oven until it melts.

This was just enough for my family with no leftovers. If you have a larger family or bigger appetites you should double the recipe.

I didn't add any salt or pepper because the chips and cheese are so salty on their own.
