What's for dinner: Crockpot Sweet N Sour Tofu & How do you like them apples?



My Mom brought up bags of apples that she picked from my brother's apple trees. I don't know what to do with all of them and I just won't can them.

I might try storing them for winter.
Or freezing apple pie filling in bags.
Or making freezer applesauce.

This Swedish Apple Pie sounds great for dessert tonight and no need for a crust.
Any more ideas?


Tasty sounding vegetarian crock pot recipes have been few and far between when I've searched for them. So far, the only thing I'm consistently successful with is vegetarian chili which I don't make often because Little Guy won't eat a bean to save his life. I was so glad to stumble upon a blog devoted solely to the use of a crock pot for a whole year. How great! I'm so making this Sweet And Sour Tofu for dinner tonight.

How about drying a few to have as snacks during winter?

We just don't like tofu. We've tried, but can't seem to warm up to it, unfortunately. We do like to use a lentil-bulgur mixture as a meat substitute occasionally.

I have a bunch of apples too and here is what I am doing with the majority.

Drying them (in the oven about 10 hours at 170)

Making fruit leather (same idea as above, but spread homemade applesauce on baking sheet lined with parchment)

Freezing applesauce (i don't even peel, just cut chunks off core and cook with a little water until soft, then puree. this makes it very smooth, if you dont like that texture, freeze in 1 cup increments to use in baking as sub for oil)

Hi! I just found you while looking for a freezer applesauce recipe! I didn't want to bother my mom at work...again. Anyway, just wanted to say thanks and blessings from one stay-at-home mom to the next. Love, love, LOVE your subtitle, by the way. I totally feel like that's what I'm doing as well :)...except we haven't gone completely vegetarian...yet.

Man that swedish pie recipe sounds soooo easy and yummmy! I'm gonna have to try it.

The freezer pie filling recipe is almost like the one I used.

we also make crockpot apple butter. It cooks for several hours and makes the house smell soooo goood as well as our toast! I didn't make any this year but am hoping my tree has enough apples to make some next year.
