Chilaquiles

Got a handful of tortilla chips or a few stale tortillas sitting around your kitchen? Make some chilaquiles.

Ingredients:

Diced Onion to your taste- I use about 1/3 to 1/2 cup
Handful or two of corn/tortilla chips or toasted (until crisp) and cut up tortillas
3-4 eggs
salt and pepper
Queso, Monterrey jack or cheddar cheese
Salsa


Fry the onion in a little oil until mostly translucent. Toss the tortillas in the pan and while they are cooking beat the egg and season with salt and pepper. Stir in the beaten eggs and gently stir into onions and chips. Stir occasionally until the eggs are done. Top with the cheese.
Add spoonfuls of salsa as desired.

You can also add cumin, green chilis, tomatoes or whatever else you have on hand.
These are great with Spanish rice and served in warm tortillas. Great for breakfast, lunch, or dinner.

This is a neat idea! I'll have to try this sometime...I'm thinking for a breakfast...never would've thought of mixing that with eggs!

This sounds very similar to migas, which I make this all the time, because it's delicious!
